The excuse “I can’t cook or bake healthy for myself/family” why I don’t tolerate it!

So let’s get this straight. I have heard sooo often from people that not only do they NOT have time to cook and bake healthy for their family, but they just don’t know how, or don’t want to take the EFFORT to cook and bake.

Now for my question: Have many of you have a kitchen? I’m assuming everyone is going to raise a hand. Okay, well that is freaking awesome, because….. I DON’T! That’s right, I don’t have a kitchen at the moment. My husband had to move away to find work cause Canada hates him, so we are separated, which means I moved into a smaller place, well, it’s a 1 bedroom but doesn’t have a kitchen. At first I thought “wtf? How am I gonna live” Then Paul said “well, with your kitchen appliances you should be able to make it work” Thank God for my husband, what would I do without him! I then decided that with a little imagination I could make it work.

What I have in my “kitchen”

– Toaster Oven

– Microwave (I discourage the use of Microwave but it came with the place and I don’t have anything else to reheat my food like a steamer)

– Beer size fridge or mini fridge.

– Vita mix (mine, obviously!)

– Slow Cooker

– Juicer

– Electric frying pan

– Electric Kettle.

– 5 ft table.

– Some shelving

– Deep freezer.

Okay, so let’s talk about what I eat on a regular basis:

Hamburgers, meatballs, pan fried fish, salads (every kind), pasta, spaghetti, home made spaghetti sauce, cookies, muffins, biscuits, stir fries, bread, eggs in all forms and shapes cooked, quiche, casseroles, stews, smoothies, veggies cooked in all sorts of different ways, nut balls, energy balls, home made fudge, hamburger buns etc etc, the list goes on really.

Now, there are many things I can’t do like bbq which I do at my parents, or cook in massive quantities which I try to cook in LARGE quantities at my parents cause my mum has the biggest kitchen ever. Otherwise all I mentioned above I create in my own little “kitchen.”

Please note: Recipes are your friend.

Now, if you currently do have a kitchen, and you currently are NOT eating as healthy as you’d like to. Get that butt in gear! This is just a motivational tool for all you lovely people to really see that cooking healthy just takes a little time and effort, but doesn’t everything? Relationships, friendships, dressing ourselves, etc.

Now, I am going to end sharing some recipes with you that I made this weekend, of the few things that I make in my “kitchen”

Almond Flour Biscuits – Grain Free/ Gluten Freeย 


A-M-A-Z-I-N-G!!!!!!!!! Is all I have to say, really. They are moist, juicy, yummy, full of butter. What more could you ask for? I don’t use almond flour that often, simply because it is pretty expensive. But then the need calls for (rather, my cravings) I do use it and I like the variety it offers.

Next on the list is pancakes. I’ve been on a pancake binge, they are my bread, basically. I make sandwiches with them. Glorious I tell you, especially with some cashew butter and my mums homemade jam = a taste of heaven. I bring 2 to work with me and eat them as part of my breakfast. They are great to make lots ahead of time and have ready in the fridge. Especially if you’re like me, and you don’t have much time to prepare breakfast in the morning.


Another fantastic recipe!! Probably one of my favourites. Reminded me of blueberry pancakes as a child, seriously amazing. AND IT MAKES TONS!! Which is huge for me as I prep for the week (and have a family) so, I actually had to put some in the freezer. I’d say this easily made 20+ pancakes! I know it’s a lot of eggs, but substitute with some egg whites would make it go a bit farther and cheaper.

Eating + Fleecy Knits

It’s been a few weeks since I last posted. It’s not because I have been intentionally ignoring my readers, it’s because my business: Fleecy Knits has taken off to a rather hectic start!
For those of you that don’t know, I run a small business on the side. It’s not because I simply enjoy knitting that I have this business, it’s because funds are extremely low in our family and I am trying to pull in a little bit more $$ to help things around the house. I knit hats, headbands and mittens that are fleece lined so that way you don’t get the wind on your ears and head in the winter time.

Last week I had a photoshoot so I was spending my whole entire week trying to have a good amount of items to photograph. Currently I am waiting on the pictures so I am excited! Within a few days I will have quite a few new items in my shop.

I have realized that a huge part of having a successful online business is having good pictures. Pictures speak so loud, people want your shop, business and items to look extremely professional and that is what I am working on. As you can probably see, a lot of my items do not look very professional, well, that was from when I first started out. You live you learn!

Yesterday I added these cute toddler fingerless mitts which I am rather proud of. They are fleece lined of course. Yesterday I made Thumbless toddler mitts, perhaps I will have pictures to share them with you tomorrow.

On another note, which is fitness related. For the past 2-3 weeks my weight loss has kind of plateaued, which really stinks because I need to stay on track if I want to reach part 1. of my weight loss goal by December. I was getting a bit worried. I haven’t been able to do a whole lot of cardio lately because I’ve been knitting so much and paired with going to bed later,ย  I don’t have much energy. I have been buckling down though and definitely have been trying to maintain my resistance training workouts. This morning I got up to take care of my son, I looked in the mirror and I thought my tummy looked a bit smaller, and so then I weighed myself and sure enough! I had lost 2 lbs! YAY!
I think the difference is that for the past couple weeks I was living the mentality that I shouldn’t be eating a lot of food, recently I cut out my grains to help aid in my weight loss (as I used to when I first lost a lot of weight back when I was 16), but I was probably only having about 4 meals a day, I was going to bed really hungry, getting up late and only having a small breakfast, then lunch then a snack and then supper. Also I wasn’t eating enough protein. So yesterday I made it my goal to eat 6 meals a day, and to not let myself get hungry, to not worry about how many calories I was eating, but to make sure I was getting enough protein paired with good fats and good carbohydrates. Overall it helped my workout more, I was more energize and lo and behold, I finally lost a couple pounds.

So, if you’re trying to lose weight, don’t be stupid like me and not eat enough because that won’t get you anywhere. Try and eat healthy meals more often! It does wonders!

Organization tips and clean recipes

Kind of a weird mix no? People have asked me for some of my organization tips so I decided to share them on my blog, along with some clean recipes that I made last week! w00t!

I’ve been on an organization binge lately, it’s turning into an addiction actually, it’s rather amazing. I think it all started when I saw this picture on pinterest (which is something I’m also addicted to and this has greatly helped my skills!)

So I started loosely following that. Then it build onto something else, my bathroom looked pretty crappy, so together with my husband we devised a plan to have it re organized to look better so I created these to take some of the ugly mess away:


I just bought plastic square tubs from the dollar store and also bought that adhesive wallpaper and put it on the box, then I glued ribbon around it to make it look pretty!ย  That picture has to be moved though because it doesn’t fit there, and the stuff isn’t exactly supposed to show on the top of the basket like it does in my picture, but I’m not OCD so I don’t really care all that much, it looks a heck of a lot better than it did before let’s just say that! (Sorry I don’t have before pictures).

Next thing I found on pinterest was this idea: An organization board.

Except mine looks like this and it’s different:

Instead of plywood I bought a cork board (which was bigger than the one in the tutorial for the original) and I got some paint from michaels. With my hubby’s help I painted the cork board and bought the frames from the dollar store, got cute clamps from staples and used command stripes to hand the frames. I made my own cleaning list and inserted it. I also made the flowers myself from another tutorial I found on pinterest! Once my husband hung this for me, you have no idea how incredibly happy this made me! I hung it right near my dishwasher so every time I go to put dishes away or take dishes out I always look at it, I stay on top of my meals this way – it’s so great!

So after this project was done, I came into the spare bedroom and saw how awful my closet looked:

And decided to do something about it. So later on in the day I had to run to town to do some errands and I needed to go to Canadian tire, and look what was on sale there!

I was delighted so then I got to work and while my son had a nice long 3 hour nap, I owned this closet and now it looks like:

If you’re wondering how I hung the milk crates from the rod, I used curtain shower hooks! Pretty awesome, also an idea stemmed from pinterest. I also did this with my ribbons (idea from pinterest:


So that’s that for now, if I have more organization tips I will post them some other time. My favourite is def my organization board though! It’s so amazing!

Onto clean recipes.

Thursday I made spaghetti sauce, but because of my mission to eat healthier and more vegetables I tweaked my recipe so I am now going to share it! It’s a crock pot recipe because I love not having to add more time to cooking supper than necessary so I put this in in the morning and it’s ready by supper time!

Vegetable Spaghetti Sauce










2 cans of tomato or regular spaghetti sauce

1 can of tomato paste

1 whole round of garlic (8-9 cloves)

5-6 leaves of Fresh basil

2 celery stems

1 green pepper (or other coloured peppers)

1 onion

1 Avocado

2 cups of chopped small spinach

1 grated carrot (optional)

1 TBSP Italian Seasoning

1/2 tsp of oregano

1/2 tsp of sage

1/2 tsp of parsley (or 3 stems of fresh parsley)

Dash of salt

Dash of pepper

Chop up everything, not too large but not too small either, put in crock pot, add and mix together. The garlic is what makes this recipe taste so good, just sayin’. ๐Ÿ™‚

Set on low for 6-7 hours and smell the loveliness throughout the day!

On Saturday Paul wanted to BBQ, so I created a random marinade, recipe for ground turkey burgers, this has to be the best I have made to date, and boy, do they taste amazing!

BBQ Turkey marinade recipe










(sorry it’s a phone picture so not the greatest quality)

lb of ground Turkey

1 egg

2 tsp of Chia seeds

1/2 avocado

3 TBSP of ground flax seeds

1/2 cup of Wheat free whole oats

1/2 tsp of Worcestershire sauce

1 tsp of Dijon mustard

1 TBSP of Olive oil

2 tsp of garlic powder

1/2 tsp of wheat free soy sauce


1 tsp of dried parsley (Fresh is better! I just didn’t have any on hand)

Makes 7 medium – large size burgers

Mix all together and let sit in fridge for 3-4 hours, then make into burgers and grill. My husband would have devoured all of them if possible!

I served this with sweet potato fries and some lightly fried zucchini, onions and sugar snap peas (So yum!)

Back from the dead!

Well, I have sort of returned from the dead, I gave birth to my adorable son almost 3 months ago now. I consider my maturity level to have gone up significantly because motherhood teaches you soooo many things very very quickly! Which is amazing and being a mother is so rewarding, much more than words can describe.


At four weeks post partum I started my work out routine, just walking a few times a week, then at about 6 weeks I started jogging. Let me just say that it felt likes death, because a I had gained too much weight during the pregnancy, my joints were dying! I pushed myself through it because it was the only thing that made me feel better. I revived my eating and started taking my measurements as well as weighing myself. Just 3 weeks ago I started weight training with the tax at home and boy does it feel great! Humiliating at first because I was lifting heavy before the 3rd trimester but I have to keep reminding myself that I just gave birth and that it takes time; I just have to keep at it.

Now my workout routine consists of jog intervals 4x/week and also resistance training 4x/week.
So far since I’ve given birth view lost approx 40 lbs. only 40 more to go. ๐Ÿ˜ก I expect to be at my desired weight goal by December, that’s being generous with my time.

The self esteem aspect of things has definitely been harder but that’s what comes with being inexperienced in the first pregnancy (unhealthy choices).

On another note, I have been requested to post a recipe for my lunch today


chicken avocado cucumber salad

1/2 avocado
1/4 of cucumber
2 stalks celery
1/2 chicken breast
2 tbsp olive oil
1/4 tsp garlic spice
1/4 tsp parsley
Dash of dill
Dash of salt

Mix and enjoy!
Also tastes good with some whole grain gluten free crackers
