Paleo Cake Batter/Cookie Dough Balls

These balls are Paleo, Gluten Free, Grain Free and Dairy free. AMAZING!!

My son loves nut balls, he’s obsessed with them. He has one every day before bed, it’s how he gets his fat in cause he doesn’t care for any form of milk. Well, I thought I would make some more for him, but momma bear didn’t feel like whipping up a thousand different nut/seed/dried fruit combos this time round and I also felt like more of a dessert so I thought to myself. “Wouldn’t it be fantastic if I could make some cookie dough balls…?” I made a recipe a while back that used Sunwarrior protein powder, they were pretty awesome, however, lately I haven’t been able to afford protein powder so I do without.

In my head I wanted to look up a recipe, cause I always look up recipes, then I thought “oh whatever, just throw stuff together and see what happens!” I was fairly confident in my cooking abilities, so off I went.

These are the ingredients I used:

photo 2 (1)4 TBSP Coconut Flour

1 TBSP Honey

2 TSP of Sunbutter (almond or cashew work too)

Small scoop of carob chips

1 tsp of PB2(Omit this if you want it completely Paleo)

1 tsp of cocao (optional)

1-2 TBSP of almond butter, may have to vary here to get the texture you want.


Mix altogether and roll with your hands into small balls. Place in fridge, and devour later! Makes approx 6-8 balls depending on how large/small theyare. What I would like to do down the road is make them into cookies, but that will have to be tweaked and altered.

If you would like to make this more of a “Dessert”, melt chocolate and cover them in chocolate – place in fridge. They would be amazing!

I gave them to my parents tonight, and they loved them! My coworker thought I was eating cookie dough! I think it’s a win recipe. πŸ™‚ Let me know your feedback if you make them! πŸ™‚

New motivation and new recipes

I have fallen off the blogging bandwagon because my business and my son have been keeping me ridiculously busy. Yet, as of late i have had some people asking me about my blog so I have come back! It’s great that people ask me about my blog, it makes me feel good because I know I’m helping people and they learn and appreciate the info I put on here.
Regarding my weight loss journey, it’s still going! I hit bottom about 2 months ago, I just stopped losing, had no motivation for working out in the house anymore. I tried p90x but it wasn’t working for me, I just didn’t enjoy it really (what’s the point of doing something if you don’t enjoy it?) and I was unhappy. Even though my business was really taking off I wasn’t happy at the weight I was currently at. Right now I’m hovering around 187-186. (When I gave birth I was 246) and my regular pre pregnancy weight is 165, so I’m suuuuper close to my goal! 1st part of my goal was to be at 179-175 by Christmas time, I still think I can make it because:


Yes, I did, I went last week just to inquire, I figured “what the hell, information can’t hurt”. When I walked in, they have a DAYCARE!! hellls yes, they had a daycare so mommies could workout. I got so wicked excited. Their monthly payment I could afford, AND I didn’t have any cancellation fees (so no worrying bout that when I have to go back to work). I was PUMPED, so I talked to the hubby about it and BOMB, I have been going regularly 4x/week with doing some pilates at home in between (or trying to at least).

Since I have joined the gym, I am SO much more relaxed, I have my time to go to the gym, I don’t worry about my weight, I’m confident even though I’m still rather plump, hey, someone’s gotta start somewhere right? I’m much weaker than I used to be but it takes time and as long as I’m putting my effort in when I go that’s all that matters. My eating is much more on track as well, I can’t just skip meals when I want to, (because that’s what I was doing beforehand when I wasn’t working out regularly.) I also have more energy and I feel overall much more confident about my body and also about my weight loss.

My eating has been really good (other than occasionally skipping meals *slaps wrist*) and I am booking an appointment to meet with a Holistic Nutritionist in the near future! I will keep you updated on that, because that’s going to be awesome.

I’m excited for my next set of measurements because now that I’m REGULARLY weight training, they are going to be changing a lot fasterΒ  for the better! I’ll be taking them next Sat! πŸ™‚

On another note, Christmas is next month (ah!!) and I’ve been really busy knitting, but I wanted to share with you some of the items I’ve been making and maybe check them out on my shop and see if you need some lovely hand knit Christmas gifts under your tree this year?

I know I’m weird, I love to knit but I’m also addicted to the gym. Hey! A person is allowed to be weird. :p

Fleecy knits

Now for some recipes, I have found this FANTASTIC page on facebook that posts holistic recipes for REAL food. Most items are gluten free, wheat free, dairy free, soy free and refined sugar free. I mean, how much more could you ask for in life?! You can find the page here: Just Eat Real Food

Lately I had made this breakfast bread that I found on their page. I made it and my husband ate it up in pretty much one sitting so I had to go and make another one. It’s EASIER than pie, and very healthy, so go make some up for yourself now! Paleo Breakfast Bread

Last night I made this double fudge: It’s VERY rich, though it’s mostly just coconut oil and almond butter, but I can’t have more than 1 piece a day because of how rich it is. If you like fudge, this is definitely for you! Paleo Double Layer Fudge

Now I’m not Paleo, but I LOVE all the paleo recipes! They are so fantastic, if you think you can do Paleo, I say go for it! πŸ™‚

Most amazing birthday ever

My birthday was this past Saturday. It was, AMAZING. Probably the best birthday I’ve had yet to date. It started off with my husband and I going to the market and my parents were generous enough to look after my son while we were out! But before we left, I go to the bathroom when I got up and there was a birthday gift and a lovely birthday card waiting for me on the counter, I think that was just a sign of how well the day was going to go. πŸ™‚

My husband gave me 5 gifts throughout the day which were going to be randomly placed which made it so exciting!! All the gifts were incredibly lovely, and I couldn’t ask for a more loving husband!

My family and I celebrated a wonderful dinner, I had an organic grass fed steak with some organic cauliflower and broccoli and grilled onions and mushrooms. YUM, topped off with the best and healthiest cake made to date! Gluten Free, Dairy free cheesecake with an almond/chocolate crust! Hands down best thing I’ve ever had and it didn’t leave you with a sugar crash either! Amazing, and thank God for my mother, she’s an amazing cook and baker. The best I’ve ever met! πŸ™‚

My family also gave me the best gift I’ve ever received (well other than my kitchen aid):

THEE sharpest, awesomest Petit Chef’s knife you will ever come across! Seriously, I mean I love cooking, but now I love it MORE. Cutting is just a joke now, it’s so easy and awesome and and and makes me feel like I’m smoking weed(though I don’t know what that feels like? ahahaha)

On TOP of that, I got some pictures back from a knitting photoshoot I had the week before, which made my day go even better! It was so great, I have some of these pictures up on my shop, but I will share them with you now cause they are pretty fantastic:

That was my birthday. It was amazing. OH, how could I forget. I took my measurements the morning of my birthday, and lo and behold, I had lost another 3 inches all around! So in total for August, I had lost 8 inches all around. So, shall I say that I really enjoyed my birthday!

And then there was the best gf df pizza crust ever!

So we are running low on food in the house: like EXTREMELY low, the fridge is pretty much ety but somehow you gotta eat, and eat healthy too…so what does one do?

I go back and forth from the fridge to the pantry with the items I have on hand which isn’t much: quinoa, turkey pepperoni, avocados, 4 mushrooms and left over spaghetti sauce…what does one do?

I wanted to do something with the quinoa, but couldn’t figure out what so I google quinoa pizza crust, just for kicks to see if there was anything out there and BEHOLD: thee best pizza crust I have yet discovered AND the healthiest and also it’s ridiculously stupid easy, it’s almost a joke.


You soak the quinoa for 8 hours ish, blend it with some more water after and baked it. Who’da thunk? It has such a great texture! Wham protein!!

My efforts in the lean kitchen zone paid off… for now

Β Yesterday I was feeling ambitious, which is rather rare because lately I’ve been fighting the flu. I was out of cornbread, and needed more food to bring for lunch.

I haven’t been eating very well lately, and by not eating very well I mean I’ve been consuming m&m’s every other day in a trail mix, and having popcorn every other day as well. That is my definition of not eating as good.

I am gluten free and dairy free, and I found this recipe a while back for gluten free cornbread, and I tweaked the recipe again, and it came out delicious! I will do my best to accurately provide the recipe for you, but I tend to not measure when I cook/bake so if you have any problems baking it, get back to me!

This is the cornbread recipe:

2 cups of yellow cornmeal

2 eggs (or egg whites)

2 cups of buttermilk (I use soy or almond milk with lemon juice/apple cider vinegar)

1 tsp of baking powder

1 tsp of baking soda

1/4 cup of grapeseed oil (or whatever you want)

1/4 cup of buckwheat flour

1 tsp of cinnamon

1 tsp of stevia

Preheat oven to 350F, mix all ingredients together and add to a pan, I use an 8 inch square pan and it doesn’t all fit, but it should fit into a large pie plate.

Bake for 20-25 minutes until tester comes out clean.

So onto my next ambition, I opened the fridge looking for something healthy to make for my lunch today and tomorrow, I found: chickpeas, broccoli, zucchini, carrots, I didn’t want to use mayo as a base and I don’t have any avocados to mush (great sadness!) so… I didn’t know where I was going with this. With only one income in the household we can’t afford to eat meat everyday so I was thinking of something else that could make my creation a little more spectacular… and then the thought came up:


Oh, they saved the day, I boiled green lentils and added them to my salad, so this is the recipe for a very yummy lentil salad:

1 cup of green lentils

1 cup of chopped up broccoli

1 cup of zucchini (I think)

1 graded carrot

1 cup of chickpeas

4 cloves finely chopped garlic

1 tsp of dillweed

1 tsp of Mrs. Dash

1/2 tsp of cumin

1/4 tsp of salt

1 TBSP of olive oil

Mix all ingredients together and just keep adding spices till you get the taste that you want! I ate this with gluten free crackers that I got from Costco (I can’t remember the brand) and it was delicious!
